The breakfast Burritos Recipe is by far the most popular and delicious Mexican dish that is loved all over the world! This recipe was popularly known as the ‘Breakfast Burrito’.
Have you ever eaten a breakfast burrito?
It was 1993 and I had just completed Navy Boot Camp at NTC, San Diego. It would be about a month before my MS A school classes, so my classmates and I had the pleasure of being assigned daily work parties to do lots of lifts and labor around the base.
One morning we were sent to a working party and that petty officer was nowhere to be found. Like good sailors everywhere, we took the opportunity to slack off and do nothing while we waited.
I spied the lunch truck on a nearby corner and was curiously surprised. I ate from the lunch truck in Pittsburgh back home, but they weren’t as well put together as the ones in front of me. Back home lunch trucks sold submarine sandwiches, coffee, donuts, chips, and cold drinks.
Nothing exciting or delicious came out of them. This truck was different though. Inside it was a grill, operated by a couple of happy chattering Mexican women. A group of equally joyful Mexicans crowded in front of the truck. It was difficult to determine whether they were there for the women or for the food.
Anyhow, I went to the front of the line and checked the menu. One item, in particular, captured my imagination. It was a breakfast burrito. I’ve eaten burritos before but never thought I could have one for breakfast. I ordered it immediately.
After a brief wait, I was handed a hot foil-wrapped torpedo. It felt as big as my hand and smelled of heaven.
I peeled back a layer of foil, as I had just seen Mexicans do, and took a bite. The flour tortilla was crisp, warm, and full of goodness on the outside.
Inside was a mix of scrambled eggs, cheese, chorizo, and fried potatoes that crunched with every bite. Drizzled with hot sauce it was fabulous! Spicy, rich, crunchy, delicious. Every bite was a thrill for my mouth.
Some grieve about their first bite of ice cream, but there was no comparison. My first breakfast burrito was more memorable than a long shot.
Where are the best burrito places in Los Altos?
You basically have 3 good options:
Estrellita Restaurant – This place has some of the best Mexican food I’ve eaten. That being said, I don’t go for burritos here, but that’s not because they’re bad. It’s just that the other food is so good, gosh!
Fiesta Vallarta – I’ve never eaten anything here but my parents eat often. Obviously, the food is fine, but I don’t expect their burritos to be worth writing home about.
Whole Foods Market – This is the “duh” option. All Whole Foods Markets have a burrito bar, but in my opinion, their burritos are as bad as burritos get. Tortillas are always tough, rice isn’t great, beans are fine, and seasoning is acceptable. WF is a last resort.
Apart from Estrellita, Mexican food is not to be consumed within Los Altos city limits. Redwood City and Mountain View are great Mexican additions that make Los Altos look like a small town in northern Canada.
Which Breakfast Is Best That Tacos Or Breakfast Burritos?
One of my favorite airport meals was at Washington-Dulles International Airport, where (at least a few years ago), the Chipotle location in the terminal was open for breakfast.
Oh, my friends, this was awesome. A massive breakfast burrito served on a hot tortilla before being filled with eggs, fried potatoes, breakfast sausage, cheese, and salsa.
Her expert hands twisted it, patted it into a foil bag, and handed it to my waiting mom. No doubt it represented more than half my calorie budget for the day, but it was awesome, and I slept well on that morning’s flight, full of silly sausage.
A breakfast burrito is a much more portable than a breakfast taco, and in airport terms at least, it was an afterthought.
But honestly, there’s not much difference between the two from a management standpoint: They already stock small tortillas, and they’ll turn out the ingredients just like burritos.
The bigger issue is whether Chipotle locations should be open for breakfast as well. And in that, my concern is getting their ducklings first at lunch and dinner.
I live near a Chipotle that had massive food handling problems a few months ago, and I’d prefer they figure out those problems before introducing eggs to their hotline.

Beans, spicy rice, grilled meats with Mexican spices (sometimes I use some good leftover chile con carne), guac, chile (optional), mayo, lettuce, some pico de gallo, some lemon wedges, Coriander, loads of cheese, mayo or yogurt, sour cream and I like to add Doritos to add crunch.
Last but not least is a perfect grill mark that marries the flavors within the burrito or bakes it with more cheese on top. Bon Appetite!

What can I do to make breakfast burritos taste better?
Since you neglected to give us a glimpse of your current breakfast burrito recipe, I can’t tell you how to improve it. Although I can tell you how I would make a breakfast burrito.
I’ll start by frying some home-fried potatoes and seasoning them well with salt, pepper, and smoked Spanish paprika. Make sure they are super crispy.
Then I’ll brown some chorizo in a skillet, add onions, and diced poblano peppers, and cook the mixture until the vegetables are tender and the chorizo is hot. Next, I’ll add the beaten egg to the chorizo mix and scramble it until the eggs are set.
I’ll pour it on a warm tortilla, pile some potatoes on top, sprinkle it with pico de gallo and jack cheese, roll it up and eat like a king.

What is your favorite breakfast burrito recipe?
I do something similar to what Susan Peer wrote. But I use cooked sliced hash browns, they fit better in a burrito. I cook some with chorizo, some with sausage, and some with bacon crumbles.
I throw eggs into the meat, and if I’m reheating them afterward, I cook the eggs about halfway through – leaving them a little runny in the pan. They’ll cook a bit more as I assemble, them and won’t become rabid when reheated later.
I don’t use salsa inside a burrito because not everyone likes it, but I sometimes have something to serve with sour cream and guacamole, but remember this is a breakfast, not a Mexican burrito.
