In this recipe, spiced pork and pasta are made with hand-crushed tomatoes and classic Italian spices to make a rich and hearty meat sauce. Directions
Preheat a large Dutch oven over medium-high heat; Melt butter and olive oil. Season the pork tenderloin with salt, pepper and a Tbsp. of Cajun seasoning.
Cook until browned on all sides - 6-7 minutes. Take out and keep aside. Add onion and habanero (add more butter or oil if needed) - stir and fry for a few minutes, picking up browned pieces with a wooden spoon.
Add garlic - fry for a couple of minutes. Add heavy cream, remaining Cajun seasoning, and pork to pot. Cook on low for about 10 minutes.
Add sauce, parsley, and 1/2 cup Parmesan. Cook for an hour. remove from heat. Add the Zitti to the sauce and stir to combine (don't forget to toss the Zitti with the butter and Parmesan first).
Pour half of the pasta mixture into a 13 x 9's casserole dish. Top with a cup of Parmesan and 1 cup of mozzarella. Pour the remaining pasta mixture into the dish and top with the remaining cheese. Cover and bake for 30 minutes, uncovered, and cook another 30 minutes.
