This slightly updated recipe produces better blueberry pie than ever before. Reviews from readers reporting a crispy, runny filling inspired me to rework the baking instructions.

Let’s talk about the material first. Here’s what you’ll need to make blueberry pie from scratch (the full recipe is below):
1.Pie Crust – You can use homemade or store-bought pastries. I use my favorite flaky pie crust recipe when I make this pie. It is made of butter and has not failed me yet.
2.Blueberries – These can be fresh (my favorite option) or frozen. Frozen blueberries need to be thawed and drain off the excess juice before using them to make pies.
3.Sugar, lemon zest, cinnamon and allspice – these add sweetness and flavor to the pie.
4.Cornstarch – For a thick pie filling, we need cornstarch. Some recipes require flour, with cornstarch working best in our testing.
5.Butter – Just a little butter makes the filling shiny and extra delicious.
6.Egg yolk and cream – these make up our egg wash, which we brush onto the crust. As the pie bakes, the egg and cream make the crust golden and shiny.
Pro tip: If you’re using fresh blueberries, buy (or choose) berries that are plump, sweet, and juicy. You can use frozen blueberries in this recipe, just thaw them and pat them dry before using them.

To make the filling, we toss blueberries with a mixture of sugar, cornstarch, allspice, cinnamon, salt, and a little lemon zest. When everything is well tossed, we mix the filling into a finished crust.
As far as the crust, we love using this recipe for an all-butter pie crust. It’s delicious and bakes up to be very flaky.

We love adding a mesh crust to our pies. The top and outside of the juice lattice in the filling bubbles – making a pie that looks utterly humble and homemade.
If you’ve never added a lattice crust before, this might sound a little daunting, but don’t worry! It’s easy (promised), and if you watch the video, we’ll walk you through the whole process.
If you don’t want to go the lattice route, you can always place a sheet of dough on top of the filling, and then add slits to the top (like we did for this cherry pie).

Before baking, we like to brush the crust with a rich egg wash made from egg yolks and cream. Then we bake until bubbling and golden brown.
The hardest part of making any fruit pie is waiting for it to cool—you need to wait two to three hours before cutting. Otherwise, the filling will spread and the crust will be wet.
Best Recipe for Making Blueberry Pie
Star-studded blueberry pie is a delicious and aesthetically pleasing dessert. It not only soothes our taste buds but is also a treat for our eyes. In this blog, I am going to tell you how you can make this pie from the comfort of your own home.
- 9 inch pastry for pie
- 4 cups fresh or frozen blueberries
- 1 1/2 cups sugar
- 1/2 Cup Quick-Cooking Tapioca
- 1 tbsp Lemon Juice or White Vinegar
- 1/4 tbsp Salt
- 2 tbsp Butter
First, we have to take a wooden board and roll the dough over it to make the pie crust. We should roll half of the dough to a circle of ⅛ inch thickness and place it over a 9-inch pie plate. Trim the remaining pastry with scissors. Then, refrigerate it for 30 minutes. Then keep the oven heated at 400 degrees.
In a separate bowl, mix the blueberries, tapioca, lemon juice and salt gently and thoroughly. Allow the mixture to rest for at least 15 minutes.
Then, after adding the butter, fill the pie pastry with the blueberry mix. Bake in the oven at 400 degrees. Then, reduce the heat to 350 degrees and bake for 10 more minutes. Keep the edges loosely covered to avoid burning.
Again, bake on the lower rack of the oven for 15-20 minutes until the blueberries swell and crackle. Then, cool on a wire rack.
Roll out the other half of the dough to about an inch thick. Use a star-shaped cutter to cut the dough into small strings of the same size. Place a baking sheet over it and bake at 350 degrees for 5-10 minutes until golden brown. Take them out and let them cool down for some time. After this put those wires on the pie in the desired pattern.
