Steps to Make Golden Apple Pie Cookies
1. Making golden apple pie Cookie Dough
In a big bowl, prepare dry mixture by mixing all purpose flour, baking powder and salt. Then, get out your food processor and add the butter and sugar. Start the food processor and mix these two well.
After that, break an egg in this mixture and also add some vanilla extract to it. Pulse the mixture until smooth.
When it is cooked, add the flour mixture to it and knead a dough of approx. Lightly flour your work surface and place this mixture on top of it. Use the magic of your hands and knead it into a smooth dough.
Both you and the dough will need to cool before proceeding to make the pie cookies. So, wrap the cookie slush pie dough in plastic wrap and put it in the fridge for 30 minutes.
2.Chunky Apple Filling
While the dough is cooling, you should make the filling. Put butter, cinnamon, sugar and apples in a medium pot. Cook the apples while stirring for 5 minutes. Then, cover the pot and cook the apples for another 5 minutes.
Using a fork, gently squeeze the apples but keep them slightly chunky and not overly pulpy. Actually, I don’t want the apples to be pulpy, and you can have whatever you like. Remove the pot from the heat and allow the apple filling to cool.
Line a cookie sheet with parchment paper. Also, preheat oven to 350℉. Roll out your cold dough on a floured surface. It should be about 2 mm thick.
Using a cookie cutter, cut out 28 circles from the flattened dough. You will need half of them for the base and half for the top.
Place 14 cookie rounds on cookie sheet and spoon some filling into center of circle. Place another circle over it, lightly moisten the edges and seal them with the help of a fork.
To make cinnamon sugar, combine cinnamon and sugar in a small bowl. Moisten the top of the pie cookies with milk water and sprinkle some cinnamon sugar over them.
Place the cookie sheet in the oven and bake your apple pie cookies until golden, about 15 minutes. After that, take them out and let them cool for about 10 minutes.
Don’t just put the burning pie in your mouth. With the cooling process done, your delicious apple pie cookies are ready to eat.
