Pancakes

1.Why are American pancakes different?

The difference between the two is an enhancing agent. The British-style pancakes served on Shrove Tuesday do not use one, while the breakfast variety served in the US—usually baking powder, or whipped egg whites, or both.

2.How do American and English pancakes differ?

The main difference is that American-style pancakes usually contain a raising agent while British do not. As a result, American pancakes tend to puff up when cooked, making them thicker and lighter. British pancakes are close to French crepes, but they are slightly smaller and slightly thicker.

3.Why are American pancakes so fat?

In North America, a leavening agent is used (usually baking powder) to make a thick fluffy pancake. A crepe is a thin Breton pancake of French origin that is cooked on one or both sides in a special pan or crepe maker to obtain a lacelike network of fine bubbles.

4.What are American pancakes made of?

First, they’re very quick and easy to prepare, with just a few basic ingredients that everyone has on hand (yes all: egg, milk, flour, sugar, baking powder – that’s all!).

5.Which is a traditional American pancake recipe?

There is no single traditional pancake recipe. There are pancakes made from sourdough flour and pancakes made from cornmeal and pancakes made from buttermilk. American pancakes of the 17th and early 18th centuries were more like crepes. Scots immigrants to the south began to use cornmeal, as they could not find oats to make oatcakes, so they created dishes that became Johnny Cakes or Travel Cakes. Southern cooks use buttermilk, and many Americans use buckwheat to make a crumpet-like cake.

6.Can American Pancakes Be Frozen?

Sure, cook, let cool, lay in a single layer on a pan, refrigerate until cold, and then put in the freezer on a sheet pan until they’re completely frozen. Then place in a zip-top bag, label and store in the freezer until warm and ready to eat. Pop them in the toaster on the lowest setting when ready to eat. Toast again if they need more “cooking”.
