The PO’boy Sandwiches is a classic New Orleans-style sandwich with a somewhat ironic name-these sandwiches are typically made with seafood, often shrimp, and that ingredient isn’t what you’d call really cheap.

Still, no one really wants a PO boy Sandwich made out of Dollar Tree baloney, so there’s the shrimp. Maybe we can just rename it to “rich boy,” but for now, the Po Boy is a very coveted and respected sandwich.

Some of them you may already have in your pantries, such as vegetable oil for frying and salt, flour, cornmeal, cayenne pepper, paprika, onion powder, garlic powder, and black pepper used for coating the dough.

And of course, you’ll need shrimp. While you can use any shape you like, Pisula notes that “medium shrimp will take longer to dip and coat because you need to do them individually.”

Marinate Shrimp

Mix buttermilk with 2 tbsp of hot chutney. Cover the thawed shrimp with the milk mixture, then put them in the refrigerator to marinate for an hour.

Coat the Shrimp in Seasoned Flour

Mix the flour with the cornmeal and dry spices. Take the shrimp out of the marinade one at a time and gently shake or tap them to remove excess liquid. Roll or dip them in the seasoned flour until they are coated

Heat 2 inches of oil in a large heavy pot until it reaches (but not exceeds) a temperature of 350 F. Add shrimp a few at a time to the pan and cook them until golden, something that should take about a minute for large shrimp. For.

Take the shrimp out and drain them onto a plate covered with paper towels, then repeat the process until all the shrimp are fried. Before you add the next batch to the oil, however, be sure to heat it until it reaches 350 F again.

Mix mayonnaise with mustard, pickles and remaining hot sauce. Spread a thin layer of the mayonnaise mixture on the bottom of each roll, then divide the prawns among the rolls and lay the lettuce and tomato over them.

Finish the PO boys with the remaining mayonnaise—plus, of course, the top halves of the rolls.
